Cod fillet and potatoes with black garlicThe recipe

Marinate the fish with a pinch of salt, a drizzle of oil, the lemon juice, chopped parsley, and a few pieces of fresh garlic. Meanwhile, slice the potatoes into fairly thin rounds, season them with salt, oil, and parsley. Also prepare the black garlic cream; heat oil in a pan with the black garlic cloves and half a glass of water. Blend in a mixer and set aside. In a pan, add a drizzle of oil and when hot, add the fish fillets (with their skin facing the pan), sear and add the potatoes. Continue cooking, drizzling a little at a time with the (hot) black garlic cream prepared earlier. Plate the fish with its potatoes, sprinkle with parsley and a bit of reduced black garlic cream. Serve the dish hot.
